Cupcakes anyone?

My youngest son bought me a new cake and muffin recipe book for Mothers Day this year, and as I had Cranberries stashed away in my baking cupboard I had to make these cupcakes!  They are so easy to make, and so sweet too, perfect to have with a cup of tea or coffee.  Of course as usual I love to scrapbook my baking efforts and I created this page for today's post.


If you fancy making these quick and easy sweet treats, here is the recipe for you:-
  • 5 1/2 tbsp of Softened Butter
  • 100g Caster Sugar
  • 1 Large Egg
  • 2 tbsp Milk
  • 100g Self Raising Flour
  • 1 tsp Baking Powder
  • 75g Cranberries
Method

  • Put 12 paper cases into a cupcake tray
  • Put the Butter and Sugar in a bowl and beat together until light and fluffy
  • Gradually beat in the egg, then stir in the milk
  • Sift in the flour and baking powder, then using a large metal spoon fold them into the mixture
  • Gently fold in the Cranberries
  • Spoon the mixture into the paper cases
  • Bake in a preheated oven at 180 oC or 350 oF for 15-20 minutes or until well risen and golden brown
  • Transfer to a wire rack to cool
